  • 23 tbsp heavy cream/milk (adjust for consistency)

For the Crumble Topping:

  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold unsalted butter, cubed
  • 1/2 cup rolled oats (optional for crunch)

For the Strawberry Layer:

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tbsp granulated sugar (to macerate strawberries)

Instructions

Step 1: Bake the Cake Base

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Whisk dry ingredients : In a bowl, combine flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar : Beat butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternate wet and dry : Gradually mix in dry ingredients and buttermilk, starting and ending with dry.
  5. Bake : Pour batter into the pan. Bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.

Step 2: Prepare the Crumble Topping

  1. Mix ingredients : Combine flour, brown sugar, cinnamon, and oats. Cut in cold butter until crumbly. Chill until ready to use.

Step 3: Make the Strawberry Layer

  1. Macerate strawberries : Toss sliced berries with sugar. Let sit for 15–20 minutes to release juices.

Step 4: Frost and Assemble

  1. Frost the cooled cake : Beat cream cheese, butter, powdered sugar, vanilla, and cream until smooth. Spread evenly over the cake.
  2. Add strawberries : Arrange macerated strawberries (drain excess juice) over the frosting.
  3. Sprinkle crumble topping : Press gently into the frosting. Chill for 1 hour before serving.

Pro Tip: For extra flavor, add a splash of almond extract to the frosting or sprinkle lemon zest over the strawberries.
