Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or line it with parchment paper.
In a large bowl, toss the diced potatoes with olive oil, salt, and pepper. Spread them evenly on the prepared baking sheet.
Roast the potatoes in the preheated oven for 20 minutes, stirring halfway through to ensure even cooking.
While the potatoes are roasting, in a small bowl, whisk together the brown sugar, soy sauce, Dijon mustard, garlic powder, and onion powder until well combined.
After 20 minutes, remove the baking sheet from the oven. Add the sliced sausage and onion to the potatoes. Drizzle the glaze over the mixture and toss to coat everything evenly.
Return the baking sheet to the oven and roast for an additional 15–20 minutes, or until the potatoes are tender and the sausage is heated through and slightly caramelized.
Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
