Ingredients
2 (11 oz each) bags Circus Animal Cookies, divided
1/4 cup melted butter (or coconut oil for a dairy-free option)
1 (3.4 oz) instant vanilla pudding mix (dry)
1 cup milk
1 (16 oz) tub whipped topping, thawed
1/4 cup rainbow jimmie sprinkles
Pink food coloring (optional)
Instructions
Line an 8×8-inch baking pan with foil, leaving overhang, and lightly spray with cooking spray.
In a food processor, crush one bag of Circus Animal Cookies until coarse, leaving some chunks for texture.
Add melted butter to the crushed cookies and mix until the mixture holds together.
Press the cookie mixture firmly into the bottom of the pan to form the crust.
In a bowl, whisk the dry pudding mix with milk until smooth. Add pink food coloring if desired.
Gently fold in half of the whipped topping until the mixture is creamy.
Spread the pudding mixture evenly over the cookie crust.
Top with the remaining whipped topping and smooth it out with an offset spatula.
In a separate bowl, crush the remaining bag of Circus Animal Cookies and sprinkle them over the whipped topping.
Sprinkle rainbow jimmie sprinkles generously on top.
Cover the pan and refrigerate for at least 8 hours or overnight before serving.
