**Decadent Chocolate Ganache Cheesecake Recipe**
Indulge in the ultimate dessert with this rich, creamy Chocolate Ganache Cheesecake. Perfect for special occasions or satisfying your sweet tooth!

### **Ingredients**
**For the Crust:**
– 1 ½ cups chocolate cookie crumbs (Oreos)
– 6 tbsp melted butter
– 2 tbsp granulated sugar

**For the Cheesecake Filling:**
– 24 oz (680g) cream cheese, softened
– 1 cup granulated sugar
– 3 large eggs
– 1 tsp vanilla extract
– ½ cup sour cream
– ¾ cup melted dark chocolate (cooled)

**For the Ganache:**
– 1 cup heavy cream
– 8 oz (225g) semi-sweet chocolate, finely chopped

**Optional Garnish:**
– Chocolate shavings, berries, or whipped cream

### **Instructions**
**1. Prepare the Crust:**
– Preheat oven to 325°F (163°C). Combine cookie crumbs, melted butter, and sugar. Press into a 9-inch springform pan. Bake for 10 minutes. Cool.

**2. Make the Filling:**
– Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and sour cream. Fold in melted chocolate. Pour over crust.

**3. Bake:**
– Place pan in a water bath (to prevent cracks). Bake 55–65 minutes until edges are set and center jiggles slightly. Turn off the oven; let cheesecake cool inside for 1 hour.

**4. Chill:**
– Refrigerate cheesecake for at least 4 hours (ideally overnight).

**5. Ganache Topping:**
– Heat heavy cream until simmering. Pour over chopped chocolate; let sit 5 minutes. Stir until smooth. Pour over chilled cheesecake.

**6. Serve:**
– Slice with a warm knife. Garnish and enjoy!
