Ingredients
2½ cups chocolate chip cookies (crushed)
½ cup unsalted butter, melted
1 cup creamy peanut butter
¾ cup powdered sugar
1 cup heavy whipping cream (cold)
1 tsp vanilla extract
1 cup chocolate chips
½ cup heavy cream
1½ cups heavy whipping cream
3 tbsp powdered sugar
½ tsp vanilla extract
Crushed chocolate chip cookies (for topping)
Instructions
Crush cookies into coarse crumbs using a food processor or rolling pin.
Mix crumbs with melted butter until evenly combined.
Press mixture firmly into a 9-inch chilled pie dish.
Chill crust 15 minutes.
Beat peanut butter and powdered sugar until smooth.
Whip cold heavy cream and vanilla to stiff peaks.
Fold whipped cream into peanut butter mixture until fully combined.
Spread mixture evenly over chilled crust.
Heat heavy cream in a saucepan until hot (not boiling).
Pour over chocolate chips, let sit 2 minutes, then stir until smooth.
Spread ganache over peanut butter layer.
Whip remaining heavy cream, sugar, and vanilla to stiff peaks.
Spread whipped cream over chocolate layer.
Sprinkle crushed cookies on top.
Chill for 4 hours or overnight.
