Description

A warm, Southern dessert combining ripe bananas, a buttery cobbler crust, and a luscious custard center. Served with a caramel garnish and cinnamon spice.

Ingredients

Scale

2 cups all-purpose flour
1 ½ cups light brown sugar
1 cup unsalted butter, melted
1 cup whole milk
1 tbsp ground cinnamon
2 tsp pure vanilla extract
1 tsp baking powder
4 large ripe bananas, sliced
1 ½ cups warm vanilla custard or pudding
½ cup granulated sugar
½ tsp ground nutmeg
1 tbsp lemon juice

Instructions

Preheat oven to 175°C (350°F) and grease a baking dish.
Combine bananas, brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, and vanilla in a bowl; spread in the dish.
Whisk flour, 1 ½ cups brown sugar, baking powder, and salt (not listed in article—assume ¼ tsp) for topping.
Add milk to the dry ingredients and mix into a smooth batter.
Pour melted butter over the banana mixture, then gently layer the batter atop without mixing.
Bake for 40–45 minutes until golden and bubbling.

Notes

Use extra-ripe bananas for optimal sweetness.
Do not overmix the batter for a tender texture.
Broil briefly for a crispier topping.
Let cool slightly to allow custard to set.
Serve warm with whipped cream or vanilla ice cream.
