Ingredients
  

Pudding Layer

  • 2 cups milk 480 ml
  • 1/2 cup heavy cream 115 ml
  • 1 cup dark chocolate 175 g, chopped
  • 3 tbsp cornflour 30 g
  • 6 tbsp sugar 75 g
  • 2 tbsp cocoa powder 15 g
  • 2 tbsp butter 25 g
  • 1 tsp vanilla extract 5 ml

Ganache Layer

  • 1/2 cup fresh cream 115 ml
  • 1/2 cup dark chocolate 88 g, chopped

Coffee Soak

  • 1 tbsp instant coffee powder 12 g
  • 1 cup warm water 240 ml

Additional Components

  • 15 chocolate cake pieces
  • Cocoa powder for dusting

Equipment

Instructions
 

Prepare the Pudding

  • Prepare the pudding mixture by whisking together sugar, cornflour, and cocoa powder in a large bowl. Ensure the dry ingredients are evenly combined.
  • In a heavy-bottom saucepan, heat the milk, heavy cream, and chopped chocolate over medium heat. Stir until the chocolate melts and the mixture is slightly warm.
  • Gradually pour the warm chocolate mixture into the dry ingredients while whisking continuously to avoid lumps.
  • Transfer the combined mixture back to the saucepan and cook over medium heat, whisking constantly, until it thickens and comes to a boil. Remove from heat and set aside.

Make the Ganache

  • For the ganache, place chopped chocolate in a bowl. Heat the fresh cream in a microwave for 40 seconds, then pour it over the chocolate. Let it sit for 1 minute before stirring until smooth and glossy.

Prepare the Coffee Soak

  • Mix the instant coffee powder with warm water to create the coffee soak. Set aside.

Assemble the Dessert

  • Assemble the dessert in a square dish by arranging a layer of chocolate cake pieces, ensuring they fit snugly.
  • Brush or drizzle the coffee soak evenly over the cake layer.
  • Spread a generous layer of the prepared pudding over the soaked cake, covering it completely.
  • Add another layer of cake pieces, soak with coffee, and finish with the ganache layer, spreading it evenly.
  • Refrigerate for at least 2-3 hours to set. Before serving, dust the top with cocoa powder.

Notes

For best results, use high-quality dark chocolate (60-70% cocoa). Compound or couverture chocolate works well for the ganache layer. Leftover cake or store-bought sponge cake can be used for convenience.
