Ingredients
  

For the Chocolate Sponge Cake:

  • 4 large eggs
  • ½ cup granulated sugar
  • ¼ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp vanilla extract

For the Filling:

  • 1 ½ cups heavy whipping cream (cold)
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups fresh or canned cherries (pitted, drained if using canned)
  • 2–3 tbsp cherry syrup or kirsch optional, for soaking cake

For Decoration:

  • Whipped cream (extra, for piping)
  • Fresh cherries (with stems if possible)
  • Dark chocolate shavings or curls

Instructions
 

Make the Sponge Cake:

  • Preheat your oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper.
  • In a large bowl, beat the eggs and sugar with an electric mixer for about 5 minutes until the mixture becomes thick and pale.
  • Sift together the flour, cocoa powder, baking powder, and salt. Gently fold these dry ingredients into the egg mixture to maintain the airy texture.
  • Stir in the vanilla extract. Spread the batter evenly in the prepared pan.
  • Bake for 10–12 minutes, or until the cake springs back when lightly touched.

Roll the Cake:

  • While the cake is still warm, turn it onto a clean towel dusted with powdered sugar. Carefully peel off the parchment paper.
  • Starting from the short side, roll the cake up with the towel inside. Let it cool completely in this rolled shape to prevent cracking later.

Prepare the Filling:

  • In a chilled bowl, whip the cold heavy cream, powdered sugar, and vanilla until stiff peaks form.

Assemble the Roll:

  • Carefully unroll the cooled sponge cake. Lightly brush it with cherry syrup or kirsch for extra moisture and flavor.
  • Spread a thick layer of whipped cream over the cake, leaving a ½-inch border around the edges.
  • Evenly distribute the cherries on top of the whipped cream.
  • Gently roll the cake back up, this time without the towel.

Decorate:

  • Place the Black Forest Cake Roll seam-side down on a serving platter.
  • Pipe additional whipped cream on top, garnish with fresh cherries, and sprinkle with dark chocolate shavings for a beautiful finish.

Chill & Serve:

  • Refrigerate the cake roll for at least 1 hour before slicing. This helps it hold its shape and enhances the flavors.
  • Slice and enjoy this rich, creamy, and fruity delight!

Notes

For a gluten-free version, replace all-purpose flour with a gluten-free flour blend. If fresh cherries aren’t available, canned cherries work well—just drain them thoroughly. Kirsch (cherry brandy) adds an authentic Black Forest flavor, but cherry syrup or juice can be used instead.
