Ingredients

Sour Cherry Filling

  • 600 g pitted sour cherries frozen or fresh and well drained
  • 60 g granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Mascarpone Cream

  • 500 g mascarpone cold
  • 500 ml heavy whipping cream cold, 35 percent fat
  • 80 g powdered sugar

Biscuit Layers

  • 200 g chocolate Petit Beurre biscuits or similar cocoa biscuits
  • 80 ml sour cherry juice reserved from the cherries

For Decorating

  • 50 to 70 g dark chocolate
  • 8 to 10 sour cherries well drained

Instructions

Prepare the Sour Cherry Filling

  • Place the sour cherries, sugar, and lemon juice in a small saucepan over medium heat. As soon as the cherries begin to release their juice, set aside 80 ml for dipping the biscuits.
  • In a small bowl, mix the cornstarch with 50 ml of additional sour cherry juice until smooth and free of lumps. If you are using fresh cherries and do not have enough juice, mix the cornstarch with 2 to 3 tablespoons of water instead.
  • Pour the cornstarch mixture into the saucepan with the cherries. Stir well.
  • Cook over medium-low heat for 5 to 7 minutes, stirring frequently, until the filling thickens. Lightly mash some of the cherries with the back of your spoon as they cook. This releases more flavor and creates a jammy texture.
  • Transfer the filling to a bowl and let it cool completely before assembling the cake.

Prepare the Mascarpone Cream

  • Place the cold mascarpone and powdered sugar in a large mixing bowl.
  • Beat briefly on low speed just until smooth. Do not overbeat at this stage, as mascarpone can become grainy.
  • Gradually add the cold heavy whipping cream while mixing on medium speed.
  • Continue beating until the cream becomes thick and firm enough to hold its shape. It should look like a stable whipped cream with soft peaks.
  • Stop as soon as you reach this consistency. Overwhipping can cause the mixture to separate and become grainy.

Assemble the Cake

  • Line a 20 by 15 cm pan with parchment paper or acetate if you want to remove the whole cake later. Leaving some overhang makes lifting easier.
  • Briefly dip each chocolate biscuit in the reserved sour cherry juice. Do not soak them. A quick dip on both sides is enough.
  • Arrange the dipped biscuits closely together in a single layer across the bottom of the pan. Break some biscuits if needed to fill gaps.
  • Spread approximately one-third of the mascarpone cream evenly over the biscuits using an offset spatula.
  • Spoon half of the cooled sour cherry filling over the cream. Leave a border of approximately 1 cm around the edges. This prevents the filling from oozing out.
  • Add another layer of chocolate biscuits briefly dipped in the sour cherry juice.
  • Spread another third of the mascarpone cream over the biscuits.
  • Add the remaining sour cherry filling, again leaving a border.
  • Add the final layer of dipped chocolate biscuits.
  • Spread the remaining mascarpone cream over the top and smooth it with a spatula.
  • Cover the pan loosely with plastic wrap and refrigerate for at least 6 hours, preferably overnight. This resting time is essential because it allows the biscuits to soften into cake-like layers and lets the flavors meld.

Decorate

  • Before serving, remove the cake from the pan using the parchment or acetate overhang. Grate or finely shave the dark chocolate over the top. Arrange the well-drained sour cherries decoratively on the cream. Slice with a sharp knife, wiping between cuts for clean slices.

Notes

The key to the cherry filling is to avoid boiling it too vigorously. A gentle simmer is enough to activate the cornstarch and thicken the cherries without breaking them down into mush. The cream should be silky and spreadable. If it feels too soft, chill it for 15 minutes before assembling.
