For the cinnamon apples

  • 2 cups diced apples Honeycrisp, Granny Smith, or Braeburn recommended
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

For the streusel topping

  • 1 cup crushed graham crackers
  • 1/2 cup butter, melted

  • Preheat your oven to 350 degrees Fahrenheit. This ensures the cups bake evenly from the start.
  • In a mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Make sure the cream cheese is softened to avoid lumps.
  • Add the vanilla yogurt and vanilla extract. Continue mixing until everything is fully combined. The mixture should look glossy and smooth.
  • In a separate bowl, toss the diced apples with cinnamon and brown sugar. Stir until every apple piece is coated. This step creates the gooey, spiced apple layer.
  • For the streusel, combine the crushed graham crackers with melted butter in another bowl. Mix until the texture becomes crumbly and holds together when pressed lightly.
  • Assemble the cups. In small ramekins or oven-safe cups, add a layer of the cheesecake mixture first. Then spoon some cinnamon apples on top. Finish with a generous sprinkle of the graham cracker streusel.
  • Place the cups on a baking sheet and bake for 15 to 20 minutes. The tops should look golden and the filling should be set around the edges with a slight jiggle in the center.

Notes

If your ramekins are deep, you can create two thin layers of each component instead of one thick layer. This gives you more of that lovely ribbon effect. For the apples, choose a firm variety like Honeycrisp, Granny Smith, or Braeburn. If you want extra crunch in the streusel, add a handful of chopped pecans or rolled oats.
