Ingredients

Cookie Dough

  • 1/2 cup butter softened
  • 4 oz cream cheese 113 g, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

Pecan Topping

  • 20 pecan halves 18–22 halves, one for each cookie

Instructions

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure even browning.
  • In a large mixing bowl, beat the softened butter, softened cream cheese, granulated sugar, and brown sugar together. Mix on medium speed for about 2 minutes, or until the mixture is creamy, light, and fully combined. Scrape down the sides of the bowl as needed.
  • Add the egg and vanilla extract. Mix on low speed until the egg is fully incorporated into the butter and cream cheese mixture. Do not overmix at this stage.
  • In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, baking soda, and salt. This ensures the leavening agents are evenly distributed.
  • Gradually add the dry ingredients to the wet ingredients. Mix on low speed just until a soft dough forms. Stop mixing as soon as no dry streaks remain.
  • Fold the chopped pecans into the dough using a spatula or wooden spoon. Distribute them evenly without overworking the dough.
  • Cover the bowl with plastic wrap and chill the dough for 30 minutes. Chilling prevents the cookies from spreading too much in the oven and helps the flavors meld.
  • Scoop about 2 tablespoons of dough per cookie. Roll each portion into a ball and place it on the prepared baking sheet. Leave at least 2 inches of space between each cookie.
  • Press one pecan half gently onto the top of each dough ball. Flatten the ball slightly with your palm so the cookie spreads evenly.
  • Bake at 350°F (175°C) for 12 to 16 minutes. The cookies are done when the edges are lightly golden and the centers look just set. They will continue to bake slightly as they cool.
  • Remove the baking sheet from the oven. Let the cookies cool on the sheet for 10 minutes before transferring them to a cooling rack. This resting time allows them to firm up without breaking.

Notes

For the best flavor, toast the chopped pecans in a dry skillet over medium heat for 3 to 4 minutes before adding them to the dough. This deepens their nutty taste. If you do not have cornstarch, you can skip it, but it helps create a softer texture. You may use light or dark brown sugar; dark brown sugar will give a slightly stronger molasses flavor. Make sure the cream cheese is full-fat for the richest result. If you only have salted butter, reduce the added salt by half.
