For the Crust

  • 2 cups graham cracker crumbs 200 g
  • 1/2 cup unsalted butter, melted 113 g
  • 1/4 cup packed brown sugar 50 g
  • Pinch salt

For the Cheesecake Filling

  • 32 oz full-fat cream cheese, softened 907 g
  • 1 cup granulated sugar 200 g
  • 1 cup sour cream 240 g
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 tablespoons all-purpose flour 16 g
  • 1/4 teaspoon salt

For the Topping

  • 1 cup thick caramel sauce about 300 g, divided
  • 1 cup heavy whipping cream 240 ml
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped chocolate-covered toffee or caramel candy bars about 170 g
  • 1/2 cup crushed toffee pieces 80 g
  • 2 tablespoons melted chocolate optional

Instructions
 

  • Preheat the oven to 325 degrees Fahrenheit. Grease a 9-inch springform pan and line the bottom with parchment paper.
  • In a medium bowl, combine the graham cracker crumbs, melted butter, brown sugar, and salt. Stir until the mixture resembles wet sand. Press it firmly into the bottom of the prepared pan using the back of a measuring cup. Bake for 8 to 10 minutes, then let the crust cool slightly.
  • In a large mixing bowl, beat the cream cheese and granulated sugar on medium-low speed until silky smooth. Scrape down the sides of the bowl often. This step is important because any lumps left now will stay in the baked cheesecake.
  • Add the sour cream, vanilla extract, flour, and salt. Mix just until combined. Avoid overmixing, which can incorporate too much air and cause cracks.
  • Add the eggs one at a time on low speed. Mix only until each egg disappears into the batter. Keeping the mixing gentle helps create that thick, creamy bakery-style cheesecake texture.
  • Pour the filling over the cooled crust and smooth the top with a spatula. Bake for 60 to 70 minutes, until the edges are set and the center still has a slight jiggle. The cheesecake will continue to set as it cools.
  • Turn off the oven, crack the door open, and leave the cheesecake inside for about 1 hour. This gradual cooling helps prevent the top from cracking. After that, remove the pan and cool completely at room temperature.
  • Refrigerate the cheesecake for at least 6 hours or overnight. A full chill makes the slices cleaner and the texture firmer.
  • Once chilled, spread about 3/4 cup caramel sauce generously over the top of the Caramel Toffee Crunch Cheesecake. Gently push some toward the edges so thick caramel drips cascade down the sides.
  • Whip the heavy cream, powdered sugar, and vanilla until stiff, fluffy peaks form. Pipe or spoon generous clouds of whipped cream over the center. Pile chopped chocolate-covered toffee candy over the whipped cream, then scatter crushed toffee around the top. Finish with the remaining caramel sauce and a little melted chocolate for an extra-indulgent drizzle.
  • Serve this Caramel Toffee Crunch Cheesecake well chilled, with extra caramel on each slice for the ultimate gooey, creamy, crunchy bite.

Notes

Use full-fat cream cheese for the creamiest texture. Room-temperature cream cheese, eggs, and sour cream blend more smoothly and help prevent lumps. For the crust, graham cracker crumbs can be swapped with digestive biscuits or vanilla wafer crumbs. A thick caramel sauce works best because it stays glossy on top of the chilled cheesecake.
