Ingredients
  

Crust

  • 22 regular Oreo cookies (about 250g)
  • 4 tablespoons unsalted butter, melted 56g
  • 1/2 cup roughly chopped pecan halves (or chocolate chips) 60g

Cheesecake Filling

  • 32 ounces full-fat brick cream cheese, softened to room temperature 904g
  • 1 cup packed light or dark brown sugar 200g
  • 1 cup full-fat sour cream, at room temperature 240g
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon fresh lemon juice optional but recommended
  • 3 large eggs, at room temperature
  • 1/4 cup store-bought or homemade caramel sauce 73g

Topping

  • 1/4 cup store-bought or homemade caramel sauce 73g
  • 4 ounces semi-sweet chocolate, finely chopped 113g
  • 1/2 cup pecan halves 60g
  • flaky sea salt optional

Instructions
 

  • Preheat your oven to 350°F (177°C). Position the rack in the lower third of the oven. Wrap the bottom and sides of a 9-inch springform pan tightly with aluminum foil.
  • Make the crust: Pulse Oreos in a food processor until fine crumbs form. Mix with melted butter, then press firmly into the pan, extending slightly up the sides. Pre-bake for 10 minutes. Sprinkle pecans or chocolate chips over the warm crust.
  • Prepare the filling: Beat cream cheese and brown sugar until smooth. Add sour cream, vanilla, and lemon juice, mixing just until combined. Add eggs one at a time, beating after each addition. Avoid overmixing to prevent cracks.
  • Pour half the batter over the crust. Drizzle caramel sauce and gently swirl with a knife. Add the remaining batter, smoothing the top.
  • Place the springform pan in a roasting pan. Pour 1 inch of hot water around it for a water bath. Bake for 55–70 minutes until the center is almost set. Tent with foil if browning too quickly.
  • Cool gradually: Turn off the oven, crack the door, and let the cheesecake sit for 1 hour. Remove and cool completely at room temperature, then refrigerate for at least 4 hours.
  • Add toppings: Melt chocolate and drizzle over the cheesecake. Top with pecans, caramel sauce, and a sprinkle of flaky salt. Slice with a warm knife for clean edges.

Notes

For the best results, use high-quality chocolate and caramel. Room-temperature cream cheese prevents lumps, while the lemon juice balances the sweetness. If you prefer a nut-free version, swap pecans for chocolate chips. Homemade caramel offers superior flavor, but store-bought works in a pinch.
