Ingredients
  

Cake Base

  • 1 cup chocolate cookie crumbs Oreo crumbs work well
  • 2 tbsp melted butter unsalted preferred

Cheesecake Layer

  • 8 oz cream cheese, softened use full-fat for best texture
  • 1/4 cup granulated sugar adjust to taste
  • 1 large egg room temperature blends better
  • 1 tsp vanilla extract pure vanilla enhances flavor
  • 1/4 cup sour cream Greek yogurt can substitute

Cherry Filling

  • 1 cup canned or fresh cherries, pitted fresh cherries add a brighter flavor
  • 2 tbsp sugar reduce if cherries are sweet
  • 1 tsp cornstarch helps thicken the filling
  • 1/4 cup water use cherry juice for extra flavor

Chocolate Topping

  • 1/2 cup dark chocolate, melted semisweet works too
  • 1/4 cup chocolate shavings use a grater for homemade shavings
  • 3–5 whole cherries for garnish fresh or candied

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C). Line a springform pan with parchment paper for easy removal.
  • In a bowl, mix chocolate cookie crumbs with melted butter. Press this mixture firmly into the base of the pan. Chill for 10 minutes to set.
  • In another bowl, beat softened cream cheese, sugar, egg, vanilla extract, and sour cream until smooth and lump-free. Pour over the chilled crust.
  • Bake for 30 minutes. Once done, turn off the oven but leave the cheesecake inside for an additional 10 minutes to prevent cracks.
  • While the cheesecake cools, prepare the cherry filling. In a small saucepan, combine cherries, sugar, cornstarch, and water. Cook on medium heat until thickened, stirring frequently. Let it cool slightly.
  • Spread the cherry filling evenly over the cooled cheesecake. Refrigerate for at least 1 hour to set.
  • Drizzle melted dark chocolate over the top and sprinkle with chocolate shavings.
  • Garnish with a few whole cherries for a stunning finish.
  • Slice and serve chilled for the best taste and texture.

Notes

For a no-bake option, skip the egg and use a gelatin or cornstarch-stabilized cheesecake mixture. Let it chill for at least 3–4 hours to set properly.
