  • 1 cup heavy whipping cream (cold)
  • 1/4 cup powdered sugar
  • 4 oz cream cheese or mascarpone (softened—optional, for a stable roll)
  • 1 tsp vanilla extract

  • A dusting of powdered sugar

Instructions
 

1. Prepare the Batter

  • In a large bowl, whisk together the flour, cocoa powder, sugar, and salt.
  • In a separate bowl, whisk the eggs, milk, melted butter, and vanilla.
  • Gradually pour the wet ingredients into the dry, whisking constantly until smooth.
  • Strain the batter through a fine-mesh sieve into a clean bowl to remove any lumps.
  • Let the batter rest for at least 30 minutes (or refrigerate overnight) to ensure tender crepes.

2. Cook the Crepes

  • Heat an 8-inch non-stick skillet or crepe pan over medium heat. Lightly grease with butter.
  • Pour about 1/4 cup of batter into the center, swirling the pan to spread it thinly.
  • Cook for 60–90 seconds until the edges lift easily, then flip and cook for another 30 seconds.
  • Stack the cooked crepes on a plate to cool completely before filling.

3. Make the Filling

  • In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla until stiff peaks form.
  • If using cream cheese or mascarpone, beat it separately until smooth, then fold it into the whipped cream for a firmer filling.

4. Assemble the Rolls

  • Lay a crepe flat and spread a thin layer of filling, leaving a small border.
  • Roll it tightly into a cylinder and repeat with the remaining crepes.
  • Drizzle with chocolate ganache, top with fresh berries, and dust with powdered sugar before serving.

For a deeper chocolate flavor, use dark cocoa powder.
