Cake

  • 3 eggs
  • 1 1/2 cups sugar
  • 1/4 tsp salt
  • 1 cup sour cream
  • 1/2 cup canola oil
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking soda
  • 2 tsp instant espresso powder
  • 1/2 cup hot water

Frosting

  • 1 cup salted butter, softened
  • 2 cups powdered sugar
  • 8 oz cream cheese
  • 1/2 cup cocoa powder

Chocolate Cornflakes

  • 7 oz milk chocolate
  • 3.5 oz dark chocolate
  • 3 cups unsweetened cornflakes avoid frosted varieties

Preparing the Chocolate Cake

  • Preheat your oven to 350°F.
  • In a large bowl, whisk together eggs, sugar, salt, sour cream, and canola oil until smooth.
  • Add flour, cocoa powder, and baking soda, whisking until just combined.
  • Mix the espresso powder with hot water, then gently fold it into the batter.
  • Pour the batter into a greased 8x11-inch baking pan.
  • Bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  • Let the cake cool completely before removing it from the pan and slicing it into three even layers.

Making the Chocolate Frosting

  • Using a hand mixer, whip softened butter, powdered sugar, cream cheese, and cocoa powder until light and fluffy.
  • Spread half of the frosting between the cake layers, leaving the top bare for the cornflake topping.

Creating the Chocolate Cornflake Crunch

  • Melt milk and dark chocolate in a microwave-safe bowl in 20-second intervals, stirring between each to prevent burning.
  • Once fully melted, fold in the cornflakes until thoroughly coated.
  • Pour the mixture over the top of the cake, pressing lightly to adhere. Serve while the chocolate is still slightly melty for the best texture.

Notes

For a less sweet version, reduce sugar to 1 1/4 cups. Substitute sour cream with Greek yogurt if needed. Use Dutch-processed cocoa powder for a deeper chocolate flavor. If you don’t have espresso powder, dissolve 1 tsp of strong coffee grounds in hot water instead.
