Graham crackers soften into tender layers that mimic pastry, while vanilla pudding and whipped topping create a rich, airy filling.

Ingredients
  

  • 1 package graham crackers, regular or honey flavor
  • 2 boxes instant vanilla pudding mix 3.4 ounces each
  • 4 cups cold milk
  • 1 container whipped topping 8 ounces, thawed
  • 1 cup chocolate frosting

Instructions
 

  • In a large bowl, whisk together the vanilla pudding mix and cold milk. Continue whisking for about 2 to 3 minutes, or until the mixture thickens noticeably. Cold milk helps instant pudding set properly.
  • Fold the whipped topping into the thickened vanilla pudding. Use a gentle folding motion rather than stirring hard. Cut through the center and lift the mixture over itself until no large streaks remain.
  • Place a single layer of graham crackers at the bottom of a 9x13 inch baking dish. Break some crackers as needed to cover the entire base without large gaps.
  • Spread half of the pudding mixture evenly over the graham crackers. An offset spatula makes this easier.
  • Add another layer of graham crackers on top of the filling. Press very lightly so the layers stay even.
  • Spread the remaining pudding mixture over the second graham cracker layer.
  • Finish with a final layer of graham crackers arranged neatly across the top.
  • Warm the chocolate frosting slightly, about 10 to 15 seconds in a microwave, until it is spreadable but not hot. Spread it evenly over the final graham cracker layer.
  • Cover the dish with plastic wrap or a lid. Refrigerate the assembled dessert for at least 4 hours or overnight before serving.

Notes

The refrigerator time is not optional. It allows the graham crackers to absorb moisture and soften into a cake-like texture. Overnight chilling often gives the best result.
