Ingredients
  

  • 8 oz cream cheese, softened
  • 6 oz instant chocolate pudding mix
  • 2 ½ cups whole milk
  • 8 oz Cool Whip (1 container) or homemade whipped topping
  • 14.4 oz chocolate graham crackers (1 box)

For the Ganache:

  • 1 cup heavy whipping cream
  • 3 cups semi-sweet chocolate chips

Optional Toppings:

  • Shaved chocolate
  • Mini chocolate chips
  • Crushed graham crackers

Instructions
 

  • In a large bowl, use a stand mixer or hand mixer to beat the softened cream cheese until light and fluffy, about 2 minutes.
  • Add the instant chocolate pudding powder to the cream cheese. Blend until the mixture is smooth and uniform.
  • Slowly pour in the milk while mixing. Continue blending until minimal lumps remain.
  • Gently fold in the Cool Whip or homemade whipped topping using a rubber spatula.
  • Spread about ½ cup of the pudding mixture onto the bottom of a 9x13-inch casserole dish, similar to how you’d layer lasagna.
  • Arrange chocolate graham crackers in a single layer over the pudding. Break pieces as needed to fit the dish.
  • Pour half of the remaining pudding mixture over the graham crackers, spreading evenly.
  • Repeat the layers: graham crackers, pudding mixture, and a final layer of graham crackers.
  • Prepare the ganache by microwaving the heavy cream for 30-60 seconds until hot. Add chocolate chips and whisk until smooth.
  • Pour the ganache over the top layer of graham crackers.
  • Refrigerate the Chocolate Icebox Cake for at least 4 hours or overnight. Freezing helps for cleaner slices; if frozen, let sit at room temperature for 15-20 minutes before cutting.
