Make the Chocolate Base

  • In a saucepan, combine 1¾ cups heavy cream with the 6 egg yolks. Heat over medium-low, stirring constantly, until the mixture is hot but not boiling. This step ensures the yolks cook gently without curdling.
  • Remove from heat and add the chopped dark chocolate. Stir until completely melted and smooth. The residual heat will melt the chocolate evenly.

Whip the Egg Whites

  • In a clean, dry mixing bowl, beat the 6 egg whites with the sugar and a pinch of salt until stiff peaks form. A pinch of salt stabilizes the egg whites, helping them hold their shape.

Fold Everything Together

  • Once the chocolate mixture has cooled slightly, gently fold in the whipped egg whites in 3 additions. Use a spatula and fold carefully to preserve the airiness. Overmixing will deflate the mousse.

Chill

  • Transfer the mousse to a serving bowl or individual dessert glasses. Cover and refrigerate overnight (or at least 8 hours) until fully set. This slow chilling process ensures the perfect texture.

Optional Whipped Cream Topping

  • Whip ¾ cup (200 ml) heavy cream with 1 tablespoon granulated sugar until soft peaks form. Spoon or pipe over the chilled mousse before serving for an extra touch of elegance.
