Ingredients
  

Chocolate Cake

  • 1 cup all-purpose flour
  • ½ cup cocoa powder unsweetened
  • ¾ cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 large eggs
  • ½ cup milk any variety
  • ½ cup vegetable oil
  • 1 tsp vanilla extract

Cheesecake Layer

  • 16 oz cream cheese softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Raspberry Layer

  • 1 cup fresh or frozen raspberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Chocolate Topping

  • 1 cup chocolate chips semi-sweet or dark
  • ½ cup heavy cream

Optional Substitutions

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper for easy removal.
  • In a large bowl, whisk the flour, cocoa powder, sugar, baking powder, and baking soda. Add the eggs, milk, vegetable oil, and vanilla extract. Mix until smooth.
  • Pour the batter into the prepared pan. Bake for 25–30 minutes, or until a toothpick inserted comes out clean. Let it cool completely.
  • Using a hand mixer or stand mixer, beat the softened cream cheese and sugar until smooth. Add the eggs and vanilla extract, blending until creamy.
  • Pour the cheesecake mixture over the cooled chocolate cake. Bake for another 20–25 minutes, or until the center is set. Allow it to cool.
  • Combine raspberries, sugar, and lemon juice in a saucepan. Cook over medium heat for 5–7 minutes, stirring occasionally, until thickened. Let it cool before spreading over the cheesecake layer.
  • Heat the heavy cream until hot but not boiling. Pour over the chocolate chips and stir until smooth and glossy. Spread evenly over the raspberry layer.
  • Refrigerate for at least 3 hours, or overnight, to allow the layers to set.
  • Slice and serve chilled.
