  • Whisk the eggs and granulated sugar in a large bowl until the mixture becomes light, fluffy, and pale. This usually takes about five minutes with a hand mixer. The eggs should triple in volume and leave a ribbon-like trail when you lift the whisk.
  • Sift the all-purpose flour and unsweetened cocoa powder over the egg mixture. Sifting prevents lumps and keeps the sponge light. Gently fold the dry ingredients into the eggs using a flexible spatula. Be careful not to deflate the air you just whipped in.
  • Pour in the milk, vegetable oil, and vanilla extract. Mix gently until the batter is smooth and fully combined. The batter should look glossy and spread easily.
  • Line a baking tray with parchment paper. Spread the batter into a thin, even layer. A rectangular tray roughly 10 by 15 inches works best. Smooth the surface with an offset spatula so the cake bakes evenly.
  • Bake at 350°F (180°C) for 10 to 12 minutes. The cake is done when it springs back lightly to the touch and pulls away slightly from the edges. Avoid overbaking, as a dry sponge will crack during rolling.
  • Allow the cake to cool completely on a wire rack. Once cooled, spread the chocolate filling evenly across the surface. You can leave a tiny border around the edges to prevent excess filling from squeezing out.
  • Roll the cake tightly from one short end to the other, keeping the filling inside. Use the parchment to help guide the roll. Do not rush this step. A steady, firm approach helps create a neat spiral.
  • Dust the outside generously with cocoa powder. Wrap the roll in plastic wrap and refrigerate until the filling is firm, usually about one hour. This rest period makes slicing much easier.
  • Slice the Chocolate Towel Cake into individual portions. Cut off the two ends for clean edges, then slice the remaining roll. Place each piece flat and decorate each end with a small piece of chocolate. The final result looks intricate but comes together with very little fuss.

Notes

Use fresh eggs at room temperature for more volume. Choose a good quality unsweetened cocoa powder. For a dairy-free version, use canned coconut cream instead of heavy cream and dairy-free chocolate. Store the cake in an airtight container in the refrigerator for up to four days or freeze for up to two months.
