Ingredients
  

Dark Chocolate Cake Layers

  • 360 g all-purpose flour about 3 cups
  • 75 g Dutch-process cocoa powder about 3/4 cup
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 400 g granulated sugar about 2 cups
  • 240 ml vegetable oil 1 cup
  • 3 large eggs room temperature
  • 480 ml buttermilk 2 cups, room temperature
  • 240 ml hot brewed coffee 1 cup
  • 2 tsp pure vanilla extract

White Vanilla Cream Filling

  • 450 g full-fat cream cheese 16 oz, room temperature
  • 120 g powdered sugar about 1 cup
  • 480 ml heavy cream 2 cups, very cold
  • 2 tsp pure vanilla extract

Chocolate Ganache Coating

  • 340 g dark chocolate 12 oz, finely chopped
  • 480 ml heavy cream 2 cups
  • 2 tbsp unsalted butter room temperature

Decoration

  • 150 g dark chocolate 5 oz, roughly broken

Instructions
 

Preparing the Cake Layers

  • Preheat the oven to 350°F (175°C). Grease and line two 9-by-13-inch baking pans with parchment paper for easy release.
  • Whisk together the flour, cocoa powder, baking soda, baking powder, salt, and sugar until fully combined and free of cocoa lumps.
  • In a separate bowl, whisk the oil, eggs, buttermilk, and vanilla until smooth. Pour the wet ingredients into the dry and mix gently.
  • Add the hot coffee, stirring just until incorporated. The thin batter ensures a moist, tender crumb.
  • Divide the batter evenly between the pans. Bake for 25–30 minutes, until a toothpick comes out with a few moist crumbs. Cool completely on wire racks, then refrigerate for at least 1 hour to make slicing easier.
  • Slice each chilled cake horizontally into two thin layers (you’ll have four total). Use three layers for the cake and reserve or freeze the extra.

Making the Vanilla Cream Filling

  • Whip the cold heavy cream until stiff peaks form. In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. Gently fold the whipped cream into the cream cheese mixture in two stages for a light, fluffy filling. Chill until firm.

Assembling the Cake

  • Assemble the cake: Place the first layer on a serving plate, spread with filling, then repeat with the second and third layers. Chill for 2 hours to set.

Making the Chocolate Ganache

  • Heat the cream until simmering, then pour over the chopped chocolate. Add the butter, let sit for 2 minutes, then stir until smooth. Cool slightly (10–15 minutes) until thickened but pourable.
  • Pour the ganache over the chilled cake, spreading evenly with an offset spatula. Chill 30 minutes to set.
  • Just before serving, pile the roughly broken chocolate chunks on top for a rustic, elegant finish.

Notes

For extra depth, try substituting the dark chocolate with a high-quality semisweet or a mix of milk and dark chocolate.
