  • Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or a Silpat. This prevents the dough from spreading too far and makes cleanup easier.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until smooth and creamy. Add the cold egg, vanilla extract, and coconut extract. Beat again until the mixture is completely incorporated and looks creamy. The cold egg helps control spread during baking.
  • Slowly mix in the baking soda, flour, rolled oats, and shredded coconut. Once the dough comes together, gently stir in the chocolate chips and toffee bits by hand. Folding by hand keeps the chips from breaking and the dough from becoming overworked.
