  • 500 g pastry-style dulce de leche

Filling

  • 400 g regular dulce de leche
  • 500 ml heavy whipping cream
  • 300 g cream cheese, softened
  • 250 g vanilla cookies or ladyfingers, broken into small pieces
  • 150 ml milk
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar optional
  • 1 pinch fine salt

  • Whip the heavy whipping cream to soft peaks using a hand or stand mixer. Be careful not to overwhip.
  • In a separate bowl, mix the softened cream cheese with regular dulce de leche until completely smooth.
  • Stir in the vanilla extract and a pinch of fine salt to enhance the flavors.
  • Gently fold the whipped cream into the dulce de leche mixture in two or three additions to maintain a light texture.
  • Break the vanilla cookies or ladyfingers into bite-sized pieces and lightly moisten them with milk.
  • Fold the moistened cookies into the cream mixture until evenly distributed.
  • Transfer the mixture to a rectangular glass baking dish and smooth the surface.
  • Refrigerate for at least 30 minutes to set slightly.
  • Stir or gently warm the pastry-style dulce de leche until spreadable, then spread it evenly over the chilled filling.
  • Lightly score the top into squares, cover with plastic wrap (without touching the topping), and refrigerate for at least 4 hours or overnight.
  • Slice into squares and serve well chilled.

Notes

For a lighter version, substitute heavy cream with whipped coconut cream. If you can't find pastry-style dulce de leche, gently heat regular dulce de leche to make it more spreadable. Gluten-free cookies can replace vanilla cookies for a gluten-free alternative.
