Ingredients

For the Crust

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter melted

For the Filling

  • 1 cup seedless raspberry jam
  • 1 cup fresh raspberries
  • 1/2 cup dark chocolate chips

For the Streusel Topping

  • 3/4 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter cold and cubed
  • 1/2 teaspoon ground cinnamon

Instructions

Step-by-Step Instructions

  • Preheat the oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving overhang on two sides.
  • Make the crust. In a medium bowl, combine 1 1/2 cups flour, granulated sugar, and melted butter. Mix until it resembles damp sand. Press it firmly into the prepared pan.
  • Bake the crust for 15 minutes, or until light golden. Let it cool slightly for about 5 minutes.
  • Spread the raspberry jam evenly over the cooled crust with an offset spatula or the back of a spoon.
  • Scatter the fresh raspberries over the jam, then sprinkle the dark chocolate chips between the berries.
  • Make the streusel. In a separate bowl, mix 3/4 cup flour, oats, brown sugar, and cinnamon. Cut in the cold cubed butter with a pastry blender or your fingertips until coarse crumbs form.
  • Sprinkle the streusel loosely over the filling. Do not press it down.
  • Bake for 25-30 minutes, until the topping is golden and the jam is bubbling around the edges. Cool completely before lifting out and cutting into 12 bars.
  • Practical tip: These Dark Chocolate Raspberry Pie Bars firm up as they cool. Give them at least 1 to 2 hours at room temperature, or chill briefly before slicing.

Notes

Optional swaps: use a 1:1 gluten-free flour blend, dairy-free butter sticks, or dark chocolate chunks. Frozen raspberries work too; add them while still mostly frozen and drain excess liquid. For a vegan version, use plant-based butter, dairy-free dark chocolate, and vegan sugar. For a gluten-free version, use a 1:1 gluten-free flour blend and certified gluten-free oats.
