Crust
- 1½–2 cups chocolate cookie crumbs (Oreo or chocolate graham crackers, about 20–25 cookies)
- ¼–½ cup unsalted butter, melted
- ¼ cup finely chopped pecans optional, for extra texture
Cheesecake Filling
- 24 oz cream cheese, softened 3 blocks / 680 g
- 1 cup granulated sugar
- ¾ cup sour cream or Greek yogurt, room temperature
- 3 large eggs, room temperature
- 1 tsp vanilla extract
- 6–8 oz semi-sweet or dark chocolate, melted and slightly cooled or ½–¾ cup cocoa powder + extra sugar adjustment
- ½–¾ cup chopped pecans toasted for best flavor
Caramel Pecan Topping
- 1–1½ cups caramel sauce store-bought or homemade: 1 cup sugar + ¼ cup water + ½ cup heavy cream + 2 Tbsp butter + pinch salt
- ¾–1 cup pecan halves or chopped pecans, toasted
- ¼ cup chocolate ganache or melted chocolate optional, for extra drizzle
Prepare the Crust
Preheat your oven to 325°F (160°C). Wrap the outside of a 9-inch springform pan in foil to prevent leaks if using a water bath.
Mix the chocolate cookie crumbs, melted butter, and optional chopped pecans until well combined. Press the mixture firmly into the bottom and slightly up the sides of the pan.
Bake the crust for 8–10 minutes, then let it cool while you prepare the filling.
Make the Filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the sugar and continue beating until the mixture is fluffy.
Mix in the sour cream, vanilla extract, and melted chocolate (or cocoa powder) until fully incorporated.
Add the eggs one at a time, mixing on low speed just until combined. Overmixing can lead to cracks, so be gentle.
Fold in the chopped pecans, then pour the filling over the cooled crust and smooth the top.
Bake the Cheesecake
Place the springform pan inside a larger roasting pan and carefully add hot water until it reaches halfway up the sides of the cheesecake pan.
Bake for 55–70 minutes, or until the edges are set but the center still jiggles slightly. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
Remove from the oven, cool to room temperature, then refrigerate for at least 4 hours (overnight is best for optimal texture).
Make or Prepare the Caramel
If making homemade caramel, heat sugar and water in a saucepan until it turns a deep amber color. Remove from heat and slowly pour in hot cream (it will bubble vigorously). Stir in butter and a pinch of salt, then let cool slightly.
Toast the pecans in the oven or a skillet for 5–8 minutes until fragrant and golden.
Decorate and Serve
Run a knife around the edges of the cheesecake to loosen it, then remove the springform side.
Warm the caramel sauce slightly for easy drizzling, then generously pour it over the top, letting some drip down the sides. Arrange toasted pecan halves around the edge or scatter chopped pecans in the center.
For an extra touch, drizzle with melted chocolate. Use a hot knife for clean slices, and serve the cheesecake chilled or at a cool room temperature.
