Ingredients

For the Bundt Cake

  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder sifted
  • 1 3/4 cups granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 4 large eggs room temperature
  • 1 cup buttermilk room temperature
  • 2 tsp vanilla extract
  • 1/2 cup hot water or hot coffee
  • 1 cup mini chocolate chips

For the Glossy Chocolate Glaze

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tbsp corn syrup

For Topping

  • mini chocolate chips extra, for topping
  • chocolate cookie crumbs optional

Instructions

Make the Bundt Cake

  • Preheat your oven to 350°F (175°C). Grease a 10-inch bundt pan extremely well, including every crevice. Dust it lightly with flour or cocoa powder and tap out the excess. This step is non-negotiable. Bundt pans have intricate shapes that love to hold onto cake batter.
  • In a large bowl, sift together the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt. Sifting removes lumps and helps the dry ingredients combine evenly.
  • In a separate large mixing bowl, beat the softened butter until it is creamy and smooth. This takes about two minutes with a hand mixer or stand mixer.
  • Add the eggs one at a time, beating well after each addition. This creates a stable emulsion and gives the cake structure.
  • Pour in the buttermilk and vanilla extract. Mix until just combined. The mixture may look slightly curdled at this stage. That is completely normal.
  • Slowly add the dry ingredients to the wet ingredients. Mix on low speed just until the flour disappears. Overmixing at this stage can make the cake tough.
  • Add the hot water or hot coffee last. Mix until the batter becomes smooth and glossy. It will be thick, rich, and deeply chocolatey.
  • Gently fold in one cup of mini chocolate chips using a spatula. Distribute them evenly without overworking the batter.
  • Pour the batter into the prepared bundt pan. Smooth the top with a spatula. Tap the pan gently on the counter once or twice to release any large air bubbles.
  • Bake for 50 to 55 minutes. Start checking at 50 minutes. A toothpick inserted into the center should come out with a few moist crumbs attached. It should not be wet. Do not overbake, as this will dry out the crumb.
  • Cool the cake in the pan for 15 minutes. Then invert it onto a wire rack. Let it cool completely for at least one hour before glazing.

Make the Glossy Glaze

  • Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer. Do not let it boil.
  • Place the semi-sweet chocolate chips, butter, and corn syrup in a heatproof bowl.
  • Pour the hot cream over the chocolate mixture. Let it sit undisturbed for two minutes.
  • Stir gently from the center outward until the glaze is glossy, smooth, and fully melted. It should drip slowly from a spoon. If it feels too thick, add a touch more warm cream.

Glaze the Cake

  • Place the completely cooled cake on a flat silver cake drum or serving plate. A cake drum gives a professional look and catches the drips beautifully.
  • Pour the glaze over the top of the cake. Start in the center and let it flow naturally down the sides. Do not spread it with a spatula. The organic drips look much more appetizing.
  • While the glaze is still wet, immediately sprinkle extra mini chocolate chips and chocolate cookie crumbs over the top. The wet glaze acts like glue, holding every topping in place.
  • Chill the cake for 30 minutes before slicing. This helps the glaze set and makes clean, picture-perfect slices.

Notes

Hot coffee deepens chocolate flavor; hot water can be substituted. Grease the bundt pan thoroughly and dust with cocoa powder to prevent sticking. Store the glazed cake in an airtight container in the refrigerator for up to five days. Freeze the unglazed cake wrapped tightly for up to three months.
