These no-bake frozen bites have a creamy Greek yogurt, peanut butter, banana, and oat filling with a dark chocolate shell. They come together in about ten minutes and freeze into perfectly portioned treats.

For the filling

  • 1 cup Greek yogurt Use plain Greek yogurt. Vanilla or sweetened yogurt will change the sweetness level.
  • 1/2 cup peanut butter Natural peanut butter works well, but stir it thoroughly before measuring.
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 ripe banana Mashed. A very ripe banana gives the best natural sweetness and a smoother texture.
  • 1/2 cup rolled oats If you prefer a thicker base, add one or two extra tablespoons. Use certified gluten-free rolled oats if needed.
  • 1 pinch salt

For the chocolate topping

  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

How to Make Frozen Greek Yogurt Peanut Butter Cheesecake Bites

  • Line a small square pan or container with parchment paper. Leave some overhang on two sides so you can lift the block out easily after freezing.
  • In a mixing bowl, whisk the Greek yogurt, peanut butter, honey or maple syrup, vanilla extract, and mashed banana until smooth.
  • Stir in the rolled oats and salt until well combined. The mixture should be thick but spreadable.
  • Press the mixture evenly into the prepared pan. Aim for an even layer about half an inch thick.
  • Melt the dark chocolate chips with the coconut oil in a microwave-safe bowl in short bursts or over a double boiler until smooth.
  • Spread the melted chocolate evenly over the top of the yogurt mixture.
  • Freeze for 2 to 3 hours, or until firm.
  • Let the pan sit at room temperature for a few minutes before lifting out the block and cutting into small bites.

Notes

Cooking tip: If the chocolate layer is too thick, it may crack when cutting. Use a sharp knife and wipe it between cuts for cleaner slices. Store cut bites in an airtight container with parchment paper between layers in the freezer for up to 2 months. Let them sit at room temperature for a few minutes before serving.
