Ingredients
  

Brownie Batter

  • 7 oz dark chocolate, chopped Use at least 70% cocoa for the best flavor. If unavailable, semi-sweet chocolate works as a substitute.
  • 14 tbsp unsalted butter
  • 3 large eggs
  • 1 cup packed dark brown sugar
  • 1 cup unsweetened cocoa powder Opt for Dutch-processed cocoa for a deeper chocolate taste.

Filling

  • ¾ cup dulce de leche Store-bought is convenient, but you can make your own by simmering sweetened condensed milk for 2–3 hours.

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease and line an 8 × 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.
  • In a heatproof bowl over simmering water (or in the microwave in 30-second intervals), melt the dark chocolate and butter together. Stir until smooth and let cool for 5 minutes.
  • In a large bowl, beat the eggs and brown sugar for 3–4 minutes, until the mixture is lighter in color and slightly fluffy. Pour in the melted chocolate mixture and stir until fully combined. Sift in the cocoa powder and fold gently until no dry streaks remain.
  • Spread half of the brownie batter evenly into the prepared pan. Spoon the dulce de leche over the batter, leaving a small border around the edges. Carefully spread the remaining brownie batter over the top, covering the filling completely.
  • Bake for 20–25 minutes, or until the edges are set and the center is still slightly soft. A toothpick inserted into the brownie (avoiding the dulce de leche filling) should come out with a few moist crumbs. Do not overbake—the brownies will continue to set as they cool.
  • Allow the brownies to cool completely in the pan before slicing. For cleaner cuts, refrigerate for 30–60 minutes before serving.
