Ingredients
  

  • 1/2 cup unsalted butter, softened to room temperature 8 Tbsp; 113g
  • 3/4 cup packed light or dark brown sugar 150g
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour spooned & leveled; 125g
  • 1 cup graham cracker crumbs about 8 full-sheet graham crackers; 120g
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips 180g
  • 1 cup marshmallow creme heaping; store-bought "Fluff" or homemade marshmallow creme

Instructions
 

  • Preheat your oven to 350°F (177°C). Line an 8-inch or 9-inch square baking pan with parchment paper, leaving an overhang for easy removal later.
  • In a large bowl, cream the softened butter and brown sugar together using a mixer on medium-high speed for about 3 minutes. The mixture should be light and fluffy.
  • Add the egg and vanilla extract, beating until fully combined. Don’t worry if the mixture looks slightly curdled—this is normal.
  • Whisk the flour, graham cracker crumbs, baking powder, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
  • Press two-thirds of the dough into the prepared pan, creating a thin, even layer. For sticky dough, slightly wetting your fingers can help.
  • Gently spread the marshmallow creme over the dough. This step requires patience—if the marshmallow creme sticks to your spatula, lightly greasing it can help.
  • Evenly sprinkle chocolate chips over the marshmallow layer.
  • Break the remaining dough into flat pieces and layer them over the chocolate chips, leaving some gaps for the filling to peek through.
  • Bake for 25-30 minutes, or until the top is lightly golden brown.
  • Cool completely before lifting from the pan using the parchment paper. Cut into squares and enjoy!
