This one-pan wonder combines savory ground beef, tender potatoes, and crisp green beans in a rich, flavorful sauce, all topped with melty cheddar cheese.

Ingredients
  

  • 1 lb ground beef
  • lbs potatoes, peeled and cut into 1-inch chunks
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • cups fresh or frozen green beans
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • Place the potato chunks in a pot of salted water. Boil for 6–8 minutes to partially cook them, then drain well. They should still be slightly firm.
  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion. Cook for 6–8 minutes, breaking up the beef until browned.
  • Drain excess grease. Add garlic and tomato paste and cook for 1 minute.
  • Stir in Worcestershire sauce, beef broth, diced tomatoes, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Simmer for 3–4 minutes.
  • Add the potatoes and green beans. Gently toss until everything is coated with the seasoned beef mixture.
  • Transfer to the prepared baking dish and spread evenly. Cover tightly with foil.
  • Bake for 25 minutes, then remove the foil and check that the potatoes are fork-tender.
  • Sprinkle cheddar cheese evenly over the top. Return uncovered to the oven for 8–10 minutes, until melted and bubbly.
  • Let rest for 5 minutes before serving.

Notes

Pro tip: For extra crispy edges, broil the casserole for the last 2 minutes of cooking time.
