Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Place the potato chunks in a pot of salted water. Boil for 6–8 minutes to partially cook them, then drain well. They should still be slightly firm.
Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion. Cook for 6–8 minutes, breaking up the beef until browned.
Drain excess grease. Add garlic and tomato paste and cook for 1 minute.
Stir in Worcestershire sauce, beef broth, diced tomatoes, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Simmer for 3–4 minutes.
Add the potatoes and green beans. Gently toss until everything is coated with the seasoned beef mixture.
Transfer to the prepared baking dish and spread evenly. Cover tightly with foil.
Bake for 25 minutes, then remove the foil and check that the potatoes are fork-tender.
Sprinkle cheddar cheese evenly over the top. Return uncovered to the oven for 8–10 minutes, until melted and bubbly.
Let rest for 5 minutes before serving.
Notes
Pro tip: For extra crispy edges, broil the casserole for the last 2 minutes of cooking time.
