Ingredients
  

For the base layer:

  • crispbreads, crushed into crumbs
  • 30 g hazelnuts, roughly chopped
  • 4 dates, finely chopped

For the creamy layer:

  • 200 g Greek yogurt (light or full-fat)
  • 1 tsp peanut butter
  • 1 tsp honey

For the chocolate topping:

  • 40 g dark chocolate
  • ½ tsp coconut oil

Optional healthier swaps:

  • 2 dates instead of 4
  • 20 g sugar-free dark chocolate
  • Substitute peanut butter with PB powder
  • 30 g chocolate or vanilla protein powder
  • ¼ tsp vanilla extract and a pinch of salt

Preparation

  • Prepare the base layer by crushing crispbreads into fine crumbs and mixing with chopped hazelnuts and dates.
  • In a separate bowl, combine Greek yogurt, peanut butter, and honey until smooth.
  • Layer the ingredients in a small dish or jar: start with the crumb mixture, followed by the yogurt cream, and finish with another layer of crumbs.

Chocolate Topping

  • Melt dark chocolate with coconut oil in a microwave-safe bowl (20-second intervals, stirring between each) or over a double boiler.
  • Pour the melted chocolate over the layered mixture.
  • For a crunchy shell, refrigerate for 1-2 hours. For a softer texture, let it set overnight.

Notes

Storage Tips:
- Refrigerate covered for up to 3 days
- For longer storage, freeze individual portions for up to 1 month (thaw in refrigerator before serving)
- The chocolate topping may develop a slight white film when refrigerated - this is normal and doesn't affect taste
- Avoid storing at room temperature for more than 2 hours to prevent the yogurt layer from spoiling
