  • 1/2 cup unsalted butter melted
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 100 g dark chocolate cut into pieces

Instructions
 

  • Preheat the oven to 200°C and generously grease 4 small ramekins. This prevents sticking and ensures easy release later. Use butter or nonstick spray, and dust with a little cocoa powder for extra insurance.
  • Whisk the melted butter and sugar together in a mixing bowl until smooth and well combined. This creates the base for your HOT CHOCOLATE LAVA CAKE. The mixture should look glossy and slightly thickened.
  • Add the eggs and vanilla extract to the mixture, whisking until everything is evenly incorporated. Make sure the melted butter is not too hot, or it could scramble the eggs. Let it cool for a minute if needed.
  • Sift in the flour, cocoa powder, baking powder, and salt. Mix gently until just combined. Avoid overmixing to keep the cake tender. A few small lumps are fine. Overworking the batter develops gluten and makes the cake tough.
  • Fill each ramekin halfway with batter. Place a square of dark chocolate in the center of each, then cover with more batter until nearly full. Leave a little room at the top for the cake to rise without spilling over.
  • Bake for 10 to 12 minutes. The edges should be firm, but the center should remain slightly jiggly. This ensures a molten flow when cut open. Start checking at 10 minutes. Every oven is different, so watch for the top to look set but the middle to wobble slightly when you gently shake the ramekin.
  • Allow the cakes to cool for 1 to 2 minutes. Carefully invert each onto a plate using a knife to loosen the edges if needed. Run a thin knife around the inside edge, place a plate on top, and flip with confidence.
  • Top with a scoop of vanilla ice cream and a generous drizzle of chocolate sauce for the ultimate contrast of warm and cold.
  • Serve immediately while the center is still molten. Every second counts for that perfect ooze.

Notes

For best results, use high-quality dark chocolate with at least 60% cocoa content. If you only have salted butter, reduce the added salt to a pinch.
