Cake Base
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- 1½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter softened
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
- Zest and juice of 1 fresh lemon
Blueberry Layer
- 2 cups fresh blueberries
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch
- 1 tbsp water
Cloud Topping
- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
Bake the Cake
Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
In a large bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually combine the dry ingredients with the butter mixture, alternating with the milk and lemon juice. Stir just until combined—overmixing can make the cake dense.
Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before assembling.
Make the Blueberry Filling
In a small saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat until the berries release their juices and soften.
Mix the cornstarch with water to create a slurry and stir it into the blueberry mixture. Simmer for 2–3 minutes, stirring constantly, until the filling thickens. Remove from heat and let it cool.
Prepare the Cloud Topping
In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to overbeat, or the cream may turn grainy.
