Instructions

Make the Oreo Crust

  • Crush the Oreo cookies into fine crumbs using a food processor.
  • Add the melted butter and pulse until the mixture resembles wet sand.
  • Press firmly into a 9-inch springform pan and refrigerate for 20–30 minutes.

Make the Cheesecake Filling

  • Beat softened cream cheese until creamy.
  • Add powdered sugar and vanilla extract, mixing well.
  • In a separate bowl, whip the cold heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture, then add chopped Oreos.
  • Spread evenly over the chilled crust and refrigerate while preparing the ganache.

Make the Chocolate Ganache

  • Place chopped chocolate and butter (if using) in a heatproof bowl.
  • Heat cream until steaming but not boiling, then pour over the chocolate.
  • Let sit for 2 minutes, then stir until smooth and glossy.
  • Pour over the cheesecake and spread evenly.

Chill Until Set

  • Refrigerate for at least 6 hours (overnight is best).
  • Before serving, garnish with whipped cream and chocolate pieces if desired.
  • For clean slices, run a knife under hot water, wipe dry, and slice.

Notes

Gluten-free option: Use gluten-free chocolate sandwich cookies for the crust. Dairy-free option: Swap cream cheese for dairy-free alternatives and coconut cream for heavy whipping cream. For a lighter version, reduce the sugar or use sugar-free powdered sweetener.
