  • cups chocolate chip cookies crushed
  • ½ cup unsalted butter melted
  • 1 cup creamy peanut butter
  • ¾ cup powdered sugar
  • 1 cup heavy whipping cream cold
  • 1 tsp vanilla extract
  • 1 cup chocolate chips
  • ½ cup heavy cream
  • cups heavy whipping cream
  • 3 tbsp powdered sugar
  • ½ tsp vanilla extract
  • Crushed chocolate chip cookies for topping

Instructions
 

  • Crush cookies into coarse crumbs using a food processor or rolling pin.
  • Mix crumbs with melted butter until evenly combined.
  • Press mixture firmly into a 9-inch chilled pie dish.
  • Chill crust 15 minutes.
  • Beat peanut butter and powdered sugar until smooth.
  • Whip cold heavy cream and vanilla to stiff peaks.
  • Fold whipped cream into peanut butter mixture until fully combined.
  • Spread mixture evenly over chilled crust.
  • Heat heavy cream in a saucepan until hot (not boiling).
  • Pour over chocolate chips, let sit 2 minutes, then stir until smooth.
  • Spread ganache over peanut butter layer.
  • Whip remaining heavy cream, sugar, and vanilla to stiff peaks.
  • Spread whipped cream over chocolate layer.
  • Sprinkle crushed cookies on top.
  • Chill for 4 hours or overnight.
