Ingredients

  • 1 cup grated coconut finely grated preferred
  • 1/2 cup sweetened condensed milk
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup white chocolate melted, for coating

Instructions

  • Add the grated coconut, sweetened condensed milk, powdered sugar, and vanilla extract to a medium mixing bowl.
  • Stir until the ingredients form a soft, moldable mixture that holds together when pressed. Use a spatula or your hands.
  • Use a small cookie scoop or your hands to portion the mixture into evenly sized pieces. Roll each portion into a small ball and arrange it on a parchment-lined plate or tray.
  • Refrigerate the shaped balls for 15 minutes to firm them up before dipping. This step helps the chocolate coat evenly.
  • Melt the white chocolate gently in a microwave-safe bowl or over a double boiler. Stir frequently until smooth. Avoid overheating, as white chocolate can seize or become grainy.
  • Dip each chilled coconut ball into the melted chocolate. Turn it with a fork or a dipping tool to coat evenly, then lift it out and let the excess drip off.
  • Place the coated balls on parchment paper or wax paper. While the coating is still soft, add optional shredded coconut, chopped nuts, or sprinkles.
  • Allow the chocolate to harden completely at room temperature, or refrigerate for a few minutes to speed up setting.

Notes

For the smoothest texture, use finely grated unsweetened coconut. If you only have sweetened shredded coconut, reduce the powdered sugar slightly. If the mixture feels too soft to shape, chill it before rolling; if too dry, add more condensed milk half a teaspoon at a time. You can replace white chocolate with dark or milk chocolate and add coconut extract if desired. For a dairy-free version, use coconut condensed milk and vegan white chocolate. Keep the coated balls chilled between batches; if the kitchen is warm, return the tray to the fridge for five minutes. Use a fork rather than your fingers for dipping to keep the coating smooth. Store in an airtight container in the refrigerator for up to 5 days. Freeze finished balls in a single layer, then transfer to a freezer-safe container; thaw in the refrigerator.
