Ingredients
  

For the cream

  • 400 g heavy cream very cold
  • 395 g sweetened condensed milk very cold

For assembly

  • 200 to 250 g cornstarch cookies such as Maria cookies or arrowroot biscuits
  • 120 ml milk for dipping the cookies

For the ganache

  • 160 g milk chocolate or semi-sweet chocolate
  • 100 g heavy cream

For decoration

  • 100 g white chocolate for drizzling

Instructions
 

  • Beat the very cold heavy cream at medium speed until it begins to thicken. This usually takes 2 to 3 minutes.
  • Gradually add the sweetened condensed milk while continuing to beat. Keep the mixer at medium speed. Stop when the mixture becomes smooth, firm, and airy. Take care not to overbeat, or the cream can turn grainy and begin to separate.
  • Spread a layer of the prepared cream across the bottom of a serving dish. A rectangular or square glass dish works well because it shows the layers.
  • Quickly dip the cornstarch cookies in the milk and arrange them over the cream in an even layer. Dip each cookie for only one or two seconds. They should feel damp but not soggy.
  • Add another layer of cream. Continue alternating layers of cream and milk-dipped cornstarch cookies until the ingredients are used. Finish with a final layer of cream on top.
  • Melt the milk chocolate or semi-sweet chocolate and mix it with the heavy cream until a smooth, shiny ganache forms. Let the ganache cool for a few minutes so it is pourable but not hot.
  • Spread the ganache evenly over the top cream layer. Work gently so the layers stay neat.
  • Melt the white chocolate and drizzle thin lines over the ganache. Use a toothpick to draw through the white chocolate lines and create a decorative pattern.
  • Refrigerate the assembled No-Bake German Pie for at least 6 hours, or overnight if possible. This rest time allows the cookies to soften and the layers to set.

Ingredient tips: Use the coldest heavy cream you can find. Cold cream whips faster and holds more air. Chill the bowl and beaters for 10 minutes before whipping if your kitchen is warm. Sweetened condensed milk must also be cold so the mixture stays stable. Cornstarch cookies are thin and crisp, which makes them ideal for soaking up milk without falling apart. If you cannot find them, use any plain tea biscuit with a similar texture. Practical tips: If the ganache thickens too much before spreading, warm it briefly over a double boiler. If the cream becomes too stiff, fold in a tablespoon of cold heavy cream to loosen it slightly. For clean slices, dip a sharp knife in hot water and wipe it dry between cuts.
