Pineapple Layer

  • 1 fresh pineapple, peeled, cored, and cut into small pieces For the best results, use fresh pineapple when in season.
  • 1 cup granulated sugar Use coconut sugar instead of granulated sugar for a deeper flavor.
  • 1 cup water

Cream Filling

  • 1 can (14-ounce) sweetened condensed milk
  • 1 can table cream Replace table cream with heavy cream for a richer texture.
  • 1 packet gelatin, prepared according to the package directions Gelatin helps set the dessert, but agar-agar can be used for a vegetarian option.

Instructions
 

  • Place the chopped pineapple, sugar, and water in a saucepan. Bring to a simmer over medium heat, stirring occasionally. Cook for 10 minutes or until the pineapple is tender and the syrup thickens slightly.
  • Remove from the heat and let the pineapple cool completely. This prevents the cream layer from melting when combined.
  • Follow the package instructions to dissolve the gelatin. Set aside to cool slightly.
  • In a large bowl, whisk together the sweetened condensed milk and table cream until smooth.
  • Slowly stir the prepared gelatin into the cream mixture until fully blended.
  • For a layered effect, spread half the cooled pineapple in a serving dish, then pour the cream mixture over it.
  • Refrigerate for at least 4 hours, or ideally overnight, for the best texture.
  • Spoon the remaining pineapple over the top before serving.

Notes

For a stunning inverted presentation, place the pineapple layer at the bottom of a mold before adding the cream mixture. Once set, flip it onto a serving plate.
