Ingredients

  • 2 cups pretzel sticks
  • 1 cup graham cracker crumbs
  • 1 cup unsalted butter 2 sticks, melted
  • 1 cup brown sugar packed
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • sea salt for sprinkling

Instructions

  • Line a 9x13-inch baking dish with parchment paper. Leave some overhang on the sides to make lifting the bars out easier after chilling.
  • Place the pretzel sticks in a large zip-top bag. Use a rolling pin to crush them into smaller pieces. You want a mix of fine crumbs and larger chunks for texture.
  • In a large bowl, combine the crushed pretzels and graham cracker crumbs. Pour the melted butter over the mixture. Stir until every piece is moist and the texture resembles wet sand.
  • Press the mixture firmly into the bottom of the prepared baking dish. Use the back of a measuring cup or a flat spatula to create an even, compact layer. This prevents the crust from crumbling when you cut the bars.
  • In a medium saucepan, combine the brown sugar, sweetened condensed milk, and vanilla extract. Place over medium heat. Stir constantly with a wooden spoon or heatproof spatula.
  • Continue cooking the caramel mixture until it thickens and turns a deep golden color. This usually takes about 8 to 10 minutes. Do not walk away. Constant stirring prevents burning and ensures a smooth texture.
  • Pour the hot caramel over the pretzel crust immediately. Spread it into an even layer using an offset spatula. Work quickly because the caramel begins to set as it cools.
  • Sprinkle the chocolate chips evenly over the warm caramel layer. Let the pan sit undisturbed for 5 minutes. The residual heat will soften and melt the chocolate.
  • Use a spatula to spread the melted chocolate into a smooth, glossy layer covering the caramel completely.
  • Sprinkle flaky sea salt over the top while the chocolate is still soft. This helps the salt adhere.
  • Refrigerate the bars for at least 2 hours. For cleaner cuts, chill them for 4 hours or overnight.
  • Lift the whole slab out using the parchment paper overhang. Place on a cutting board and slice into squares or rectangles with a sharp knife. Serve chilled or at room temperature, depending on your preference.

Notes

Store the finished bars in an airtight container in the refrigerator. They will keep well for up to one week. Place parchment paper between layers to prevent sticking. Freeze individual squares in a freezer-safe bag for up to three months. For clean slices, use a sharp chef's knife and wipe the blade between cuts.
