Ingredients

  • 1 box graham crackers If you prefer a gluten-free version, use gluten-free graham crackers or gluten-free cookies.
  • 8 oz cream cheese, softened Full-fat cream cheese works best for a rich texture, but reduced-fat can be used if needed.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping Homemade whipped cream can replace store-bought whipped topping for a fresher taste.
  • 2 cups fresh strawberries, sliced Frozen strawberries can be used if fresh aren’t available, but thaw and drain them first to avoid excess moisture.
  • ½ cup strawberry jam Swap with raspberry or blueberry jam for a different flavor twist.

Instructions

  • In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped topping until the mixture is light and fluffy.
  • Spread a thin layer of the cheesecake mixture on the bottom of a 9x9-inch baking dish. Add a single layer of graham crackers, covering the entire bottom. Spread about one-third of the cheesecake mixture over the graham crackers. Top with a layer of sliced strawberries and drizzle with strawberry jam.
  • Continue layering graham crackers, cheesecake filling, strawberries, and jam until all ingredients are used. Finish with a final layer of cheesecake filling on top.
  • Cover the dish and refrigerate for at least 4 hours, or overnight. This allows the graham crackers to soften and the flavors to meld together.
  • Garnish with extra strawberries before serving. Slice into squares and enjoy chilled.

Notes

For those looking for lighter or dietary-friendly options, consider these swaps:
- Use low-fat cream cheese and sugar-free whipped topping to reduce calories.
- Opt for a sugar-free or naturally sweetened strawberry jam.
- Replace graham crackers with almond flour cookies for a lower-carb version.
- For a vegan alternative, use dairy-free cream cheese and coconut whipped topping.
