Ingredients
  

Whipped Cream

  • 1 and 2/3 cup heavy cream chilled
  • 1/3 cup powdered sugar adjust to taste
  • 1 teaspoon vanilla extract

Red Velvet Crust

  • 3 cups graham cracker crumbs
  • 1/4 cup strawberry jam
  • 1/2 cup plus 2 tablespoons unsalted butter melted
  • Red gel food coloring

Cheesecake Layer

  • 1/2 cup unsalted butter softened
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup diced fresh strawberries
  • 1 cup prepared whipped cream

Blueberry Jello Salad Layer

  • 2 3 oz packages berry blue Jello
  • 1 and 1/4 cup boiling water
  • 2 cups blueberry pie filling
  • 1 cup canned crushed pineapple drained

Topping

  • 2 and 1/2 cups whipped cream
  • fresh strawberries halved
  • fresh blueberries
  • 1/4 cup white chocolate chips

Instructions
 

Prepare the crust

  • In a bowl, combine graham cracker crumbs, strawberry jam, melted butter, and red food coloring. Mix until evenly moistened. Press firmly into the bottom of a 13x9x2 inch dish. Freeze for 15-20 minutes to set.

Make the whipped cream

  • Using chilled heavy cream, beat until soft peaks form. Add powdered sugar and vanilla, then continue beating until stiff peaks form. Reserve 1 cup for the cheesecake layer and set the remainder aside for the topping.

Create the cheesecake layer

  • Cream together softened cream cheese, powdered sugar, vanilla, and softened butter. Gently fold in 1 cup of the prepared whipped cream (it should be stiff for best results). Add diced strawberries last. Spread over the chilled crust and refrigerate.

Prepare the blueberry jello layer

  • In a large bowl, combine berry blue Jello with boiling water. Stir until completely dissolved. Let cool for 15-20 minutes, then stir in pineapple and blueberry pie filling. Allow to reach room temperature (you can speed this up in the fridge, but stir occasionally).

Assemble layers

  • Once the jello mixture has thickened slightly but hasn't fully set, pour it over the chilled cheesecake layer. Return to refrigerator until fully set (about 2 hours).

Finishing touches

  • Spread reserved whipped cream over the set jello layer. Before serving, decorate with fresh berries. Melt white chocolate chips and drizzle over the top for an elegant finish.
