  • 2 cups cream cheese, softened use vegan cream cheese if needed
  • 1 cup powdered sugar or a sugar substitute like erythritol
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream or coconut whipped cream
  • 1 cup chocolate syrup sugar-free if preferred
  • 1/2 cup caramel sauce homemade or store-bought
  • 1/2 cup chopped pecans toasted for extra flavor

Instructions
 

  • In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
  • Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Use the back of a spoon or a flat measuring cup to create an even layer. Chill for 10 minutes to set.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy. This should take about 2-3 minutes with an electric mixer.
  • Gradually add the powdered sugar and vanilla extract while continuing to mix. Scrape down the sides of the bowl to ensure everything is fully incorporated.
  • Gently fold in the whipped cream until no streaks remain. Be careful not to overmix, as this can deflate the whipped cream.
  • Pour the cream cheese mixture over the chilled crust. Use a spatula to smooth the top for an even finish.
  • Drizzle chocolate syrup and caramel sauce over the cheesecake in a decorative pattern. A zigzag or swirl design works beautifully.
  • Sprinkle the chopped pecans evenly over the top, pressing lightly to help them adhere.
  • Refrigerate the No-Bake Turtle Cheesecake for at least 4 hours, or until fully set. For best results, chill overnight.
