  • 30 oz canned sliced peaches drained and chopped
  • 3.4 oz instant vanilla pudding mix
  • 1 cup cold milk
  • 8 oz whipped topping thawed
  • 1 cup mini marshmallows
  • 1/2 cup sweetened shredded coconut optional
  • 1/2 cup chopped pecans optional
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar optional

Instructions
 

  • Drain the canned peaches thoroughly in a colander. Let them sit for a few minutes, then pat them gently with paper towels. Chop the peach slices into bite-sized pieces.
  • In a large mixing bowl, whisk the instant vanilla pudding mix with the cold milk for 1 to 2 minutes. The mixture should become smooth and slightly thickened.
  • Stir in the vanilla extract and powdered sugar if using. Whisk until everything is dissolved.
  • Gently fold the thawed whipped topping into the pudding mixture. Use a rubber spatula and a light hand. You want the mixture to stay airy and fluffy.
  • Fold the drained chopped peaches into the creamy mixture. Be careful not to crush the fruit.
  • Fold in the mini marshmallows. If you are using shredded coconut and chopped pecans, add them now as well.
  • Cover the bowl with plastic wrap or a lid. Refrigerate for at least 2 hours. This chilling time allows the pudding to firm up and the marshmallows to soften slightly.
  • Give the chilled fluff a gentle stir before serving. If it seems too thick, you can fold in a splash of milk. If it seems too loose, let it chill a little longer.
  • Garnish with peach slices, a dollop of whipped topping, chopped pecans, or shredded coconut if desired.
  • Serve chilled and return any leftovers to the refrigerator promptly.
