Ingredients

  • 1 8 ounce package cream cheese, softened Full-fat cream cheese ensures the richest texture, but light cream cheese works if preferred.
  • ½ cup salted caramel ice cream topping Homemade or store-bought both work—just ensure it has a balanced sweetness.
  • ¼ teaspoon coarse ground sea salt
  • 32 Oreo cookies Gluten-free Oreo-style cookies can be substituted if needed.
  • 6 ounces strong brewed coffee, cooled The coffee enhances the chocolate flavor, but decaf works too. Alternatively, use milk for a milder taste.
  • 1 16 ounce container Cool Whip, thawed and divided Homemade whipped cream can replace Cool Whip if desired, though the texture may vary slightly.
  • Caramel and chocolate syrups, for drizzling
  • Additional coarse ground sea salt, for garnish

Instructions

  • In a mixing bowl, beat the cream cheese, salted caramel ice cream topping, and coarse ground sea salt together until smooth and creamy.
  • Gently fold in 2 cups of Cool Whip into the caramel cheesecake mixture until light and fluffy. Overmixing can deflate the mixture, so be gentle.
  • Dip 16 Oreo cookies one at a time in the cooled coffee and place them in the bottom of an 8x8-inch pan. The coffee adds depth without overpowering sweetness.
  • Spread half of the caramel cheesecake mixture over the dipped Oreo cookies.
  • Add another layer of dipped Oreo cookies, followed by the remaining caramel cheesecake mixture.
  • Spread 1 cup of Cool Whip over the top layer for a light, airy finish.
  • Refrigerate the cake for 4–6 hours, or overnight for best results. This allows the flavors to meld and the layers to set.
  • Before serving, drizzle with caramel and chocolate syrups and sprinkle with coarse sea salt for a perfect balance of sweet and salty.
  • Keep leftovers in a tightly sealed container in the refrigerator for up to 3 days.

Notes

For a lighter version of this dessert, try these swaps: Use reduced-fat cream cheese and light Cool Whip. Opt for sugar-free caramel sauce. Substitute gluten-free or protein-enriched cookies for the Oreos. Skip the chocolate drizzle for fewer calories.
