Is there anything more comforting than a tender, melt-in-your-mouth pot roast simmered in a rich, flavorful gravy? The Slow-Braised Pot Roast with Pearl Onions is a timeless classic that transforms humble ingredients into a show-stopping meal with minimal effort.

Ingredients
  

For the Pot Roast:

  • 1.5–2 kg beef chuck roast (fattier cuts work best for braising)
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste for umami depth
  • 2 cups beef stock low-sodium if preferred
  • 1 cup red wine such as Cabernet Sauvignon or Merlot; substitute with extra stock if needed
  • 2 tsp Worcestershire sauce adds tangy richness
  • 2 sprigs fresh thyme or ½ tsp dried thyme
  • 2 sprigs fresh rosemary or ½ tsp dried rosemary
  • 2 bay leaves

For the Vegetables:

  • 450 g pearl onions, peeled frozen work well for convenience
  • 3–4 carrots, cut into chunks
  • 500 g baby potatoes, halved

For the Gravy (Optional Thickening):

  • 2 tbsp butter
  • 2 tbsp flour

Instructions
 

  • Pat the beef chuck roast dry with paper towels. This helps achieve a better sear. Generously season all sides with salt and pepper.
  • Heat olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until deeply browned, about 3–4 minutes per side. Remove and set aside.
  • Reduce heat to medium. Add chopped onion and cook for 4–5 minutes until softened. Stir in garlic and tomato paste, cooking for another minute to release aromas.
  • Pour in red wine, scraping up any browned bits from the bottom of the pot. This step adds rich depth to the sauce.
  • Return the seared roast to the pot. Add beef stock, Worcestershire sauce, thyme, rosemary, and bay leaves. The liquid should reach halfway up the roast.
  • Cover the Dutch oven and transfer to a 160°C / 325°F oven. Braise for 2½ hours, allowing the beef to become tender.
  • Uncover and add pearl onions, carrots, and potatoes. Cover again and return to the oven for 45–60 minutes, or until vegetables are fork-tender and beef shreds easily.
  • Remove beef and vegetables. Discard herbs and bay leaves. For thicker gravy, simmer the braising liquid on the stovetop. Whisk in a mixture of flour and butter until desired consistency is reached.
  • Slice or shred the beef, spooning gravy and vegetables over the top.

Notes

This dish is ideal for lazy weekends or meal prepping, as most of the cooking time is hands-off.
