Filling

  • 4–5 ripe bananas, sliced
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg optional
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Cobbler Topping

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted 1 stick
  • ½ cup milk

Instructions
 

  • Heat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish to prevent sticking.
  • In a bowl, gently toss sliced bananas with brown sugar, granulated sugar, cinnamon, nutmeg, lemon juice, and vanilla. Spread this mixture evenly in the prepared dish.
  • In another bowl, combine flour, baking powder, salt, and sugar. Whisk until well blended.
  • Pour in melted butter and milk, stirring until you have a smooth batter.
  • Spoon the batter over the banana mixture, allowing some fruit to peek through for texture.
  • Place in the oven and bake for 40–45 minutes, or until the topping is golden and set.

Notes

For a healthier twist, substitute half the sugar with honey or maple syrup. If you're out of brown sugar, white sugar with 1 tsp molasses works too. Gluten-free flour can replace all-purpose flour for a gluten-free version. Almond or oat milk can substitute regular milk for a dairy-free option.
