Ingredients
  

Base & Fruit

  • 1 ½ cups whole wheat flour or oat flour for a gluten-free option
  • 1 cup pitted dates, chopped
  • ½ cup whole walnuts or almonds plus extra for topping

Sweetener & Moisture

  • ½ cup brown sugar or coconut sugar
  • ½ cup melted butter or coconut oil
  • ½ cup milk dairy or plant-based

Binding & Leavening

  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of salt

Glaze

  • 2 tbsp honey, maple syrup, or caramel drizzle

Instructions
 

  • Soak the chopped dates in warm water or milk for 10 minutes to soften them. This step ensures a moist, sticky texture.
  • In a large bowl, whisk together the eggs, melted butter, brown sugar, and vanilla extract. Stir in the soaked dates (including any leftover liquid).
  • Gently fold in the flour, baking soda, salt, and walnuts until just combined. Overmixing can make the loaf dense.
  • Pour the batter into a greased loaf pan and bake at 350°F (175°C) for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  • Once cooled slightly, drizzle with honey, maple syrup, or caramel for extra sweetness.

Notes

Let the cake cool for 10 minutes before slicing to prevent crumbling.
