Ingredients
  

Graham Cracker Crust

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar

Cheesecake Filling

  • 32 oz full-fat cream cheese, softened 4 blocks
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 2 tablespoons cornstarch
  • 12–15 large strawberries, halved

White Chocolate Drip

  • 6 oz white chocolate
  • ¼ cup heavy cream

Decoration

  • Whipped cream
  • Whole fresh strawberries
  • Graham cracker crumbs

Instructions
 

  • Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  • In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then let it cool completely.
  • Cut strawberries in half and arrange them cut-side outward along the inside edge of the pan. This creates a beautiful strawberry ring visible in every slice.
  • Beat the cream cheese until smooth, then mix in the sugar. Add sour cream and vanilla, blending until incorporated. Stir in cornstarch, then add eggs one at a time on low speed. Be careful not to overmix.
  • Carefully pour the batter over the strawberries, ensuring even distribution. Smooth the top gently with a spatula.
  • Bake for 60–70 minutes. The center should still wobble slightly when done. Turn off the oven, crack the door open, and let it rest for 1 hour. Transfer to the refrigerator and chill overnight.
  • Heat the cream until steaming, then pour over chopped white chocolate. Let it sit for 2 minutes before stirring until smooth. Cool slightly, then spoon around the edge to create drips.
  • Pipe whipped cream rosettes around the top, garnish with whole strawberries, and sprinkle with graham cracker crumbs.

Notes

Using cold cream cheese can lead to lumps in the batter. Always soften it at room temperature before mixing. Overmixing the batter after adding eggs can cause cracks—mix just until combined. Covering the cheesecake while still warm traps condensation, so allow it to cool completely before wrapping.
