Ingredients
  

  • 2 cups fresh vegetables (bell peppers, zucchini, broccoli, or your choice)
  • 1 lb boneless, skinless chicken breasts or substitute tofu, shrimp, or chickpeas
  • 2 cups cooked grains brown rice, quinoa, or whole wheat pasta work well
  • 1/2 cup teriyaki sauce store-bought or homemade
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ginger powder optional, for extra depth
  • Salt and pepper to taste
  • 1 tablespoon sesame seeds for garnish
  • 2 green onions, thinly sliced for garnish

Instructions
 

  • Wash and chop vegetables into even, bite-sized pieces for uniform cooking. Slice chicken into 1-inch strips if using. Cook grains according to package instructions if not using leftovers.
  • Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add chicken and cook for 5–6 minutes, stirring occasionally, until no longer pink. Season lightly with salt and pepper.
  • Remove chicken from the skillet and set aside. Add the remaining oil, then toss in vegetables. Stir-fry for 4–5 minutes until tender-crisp. Sprinkle with garlic powder and ginger (if using).
  • Return the chicken to the skillet. Pour teriyaki sauce over the mixture, stirring to coat everything evenly. Reduce heat to low and simmer for 3–4 minutes to let flavors meld.
  • Fold in cooked grains and warm through for 1–2 minutes. Taste and adjust seasoning if needed.
  • Top with sesame seeds and green onions for freshness.
